RESUMEN
El presente trabajo tuvo como objetivo caracterizar física, funcional y estructuralmentemente los almidones extraídos de cinco variedades de papas nativas (Solanum tuberosum) var. Andígena: Águila (AG), Bretaña (BR), Manzana (MN), Perla (PE) y Shuita (SH). La extracción se realizó con agua y decantaciones sucesivas. Se caracterizaron los almidones mediante determinación de color, contenido de amilosa aparente, claridad, poder de hinchamiento y solubilidad, forma y tamaño del gránulo, cristalinidad, espectroscopía de infrarrojo con transformada de Fourier, propiedades térmicas, propiedades reológicas y texturales. El almidón Águila presentó el menor contenido de amilosa, el menor poder de hinchamiento y solubilidad; y el almidón Manzana presentó temperaturas de gelatinización más altas. En el estudio reológico, los geles de los almidones se ajustaron al modelo Herschel-Bulkley con un umbral de fluencia promedio de 57.2 Pa y un índice de consistencia promedio de 54.4 Pa.sn; mientras que el gel del almidón Perla presentó los mayores valores de firmeza, gomosidad, masticabilidad, y cohesividad.

ABSTRACT
The aim of this work was to characterize physical, functional and structurally the starches isolated from five native potato varieties (Solanum tuberosum subsp. Andígena): Águila (AG), Bretaña (BR), Manzana (MN), Perla (PE) y Shuita (SH). The extraction was carried out with water and successive decantation. The starches were characterized, amylose content, clarity, swelling power and solubility, shape and size of the granule, crystallinity, Fourier-transform infrared spectroscopy, thermal properties, rheological and textural properties. Águila starch had the lowest amylose content, the least swelling and solubility power; and Manzana starch had higher gelatinization temperatures.
