Diseño e implementación de la metodología Lean Manufacturing para incrementar la productividad en la empresa Industrias APM S.R.L.

Abstract

El presente estudio tiene como objetivo diseñar e implementar la metodología Lean Manufacturing o manufactura esbelta que favorezca a la productividad en el área de producción de la empresa Industrias APM S.R.L., dicha empresa se dedica a la fabricación y comercialización de productos de panadería y pastelería, encontrándose ubicada en el Jirón Manuel Seoane N° 230, departamento de Cajamarca. La investigación es de tipo aplicada – nivel descriptivo, debido a que las variables no son manipuladas directamente, sino, que se han observado situaciones existentes para de esta manera recolectar los datos necesarios con el fin de determinar el comportamiento de estas. Para poder realizar la evaluación respectiva, se tomará en cuenta a cuatro de sus productos más representativos que son comercializados por la empresa: Conos Rellenos de Manjar Blanco, Bizcocho Chancay, Bizcocho Grande, Rosquitas. En primer lugar, se realizó un diagnóstico de la empresa respecto a la metodología lean Manufacturing, Seguidamente, se organizó la información y se construyeron dos Ishikawa que ayudaran a identificar las causas potenciales que existen en el área de producción, diagrama de procesos de los productos que nos permitieron a cuantificar la materia prima utilizada para la elaboración de cada producto. Luego, se aplicó las herramientas: 5’S, Kanban, Balance de Línea, TPM (mantenimiento productivo total), para la mejora de los procesos con el objetivo de incrementar la productividad y el VSM (Value Stream Mapping o Mapa de Flujo de Valor) para apoyar en la orientación de los procesos. Con el VSM se muestra la diferencia de los tiempos de producción (disminución de tiempos), se estimó un Tiempo de Valor Agregado de 328 minutos y un Tiempo de Valor No Agregado de 11 minutos. La inversión de la implementación fue de S/.59,827.50, se obtiene un VAN(S/.70,664.75), TIR(48%) y el IR(S/.1,18) y si se consigue una mejora en la producción de los Conos Rellenos de Manjar Blanco (104,17%), Bizcocho Chancay (246,46%), Bizcocho Grande (108,94%), Rosquitas (157,96%). Finalmente con las mejoras propuestas contribuyan a una mejora en los procesos y resulte un beneficio para la empresa.

First, a diagnosis of the company was carried out regarding the lean manufacturing methodology. Subsequently, the information was organized and two Ishikawa were built to help identify the potential causes that exist in the production area, diagram of product processes that allowed us to quantify the raw material used to make each product. Then, the tools were applied: 5'S, Kanban, Line Balance, TPM (total productive maintenance), for the improvement of the processes with the aim of increasing productivity and the VSM (Value Stream Mapping or Value Flow Map) to support in the orientation of the processes. The VSM shows the difference in production times (decrease in times), an Added Value Time of 328 minutes and a Non-Added Value Time of 11 minutes were estimated. The investment of the implementation was S / .59, 827.50, obtaining a NPV (S / .70, 664.75), TIR (48%) and IR (S / .1.18) and if an improvement in the production of the White Manjar Stuffed Cones (104.17%), Chancay Sponge Cake (246.46%), Large Sponge Cake (108.94%), Rosquitas (157.96%). Finally, with the proposed improvements they contribute to an improvement in the processes and result in a benefit for the company.
